Valentines’ Day Dinner 2012 Features Mixed Greens Mixed greens salad with a slow roasted tomato and truffle vinaigrette with hearts of palm, roasted tomatoes and thin sliced purple onions Lentil Salad Chilled lentil salad with roasted shallot vinaigrette, parmesan crisp and sliced prosciutto Oysters Half dozen local oysters, Rockefeller style (bacon and parmesan creamed spinach) freshly shucked and oven roasted 8 oz. Lobster Tail Lobster tail poached in vanilla butter then grill marked and served with sautéed asparagus, two potato au gratin and clarified vanilla butter Certified Angus Beef Tenderloin Grilled Certified Angus Beef tenderloin gilded with house made Foie Gras mousse and finished with a port wine reduction. First Course - Tuna stuffed peppadews Wine Pairing: Villa Castaldo Prosecco Fresh tuna salad marinated with an Italian “cold extracted” extra virgin olive oil, light mayonnaise and house made pepper vinegar stuffed in a sweet and spicy peppadew pepper Second Course - Veal Piccata Wine Pairing: Stefanini Soave Il Selese A classic, lightly flour dusted, thinly pounded, pan seared veal cutlet topped with a white wine lemon and capers sauce Third Course - Quail and Squash Wine Pairing: Villa Girardi Terra del Cileigi Brick roasted quail resting on a nest of spaghetti squash, sage and roasted walnuts Fourth Course - Spicy Prawn Risotto Wine Pairing: Dezzani Malvasia Slow roasted tomato, garlic and saffron risotto with a roasted diablo prawn Fifth Course - Ravioli and Lamb Bolognese Wine Pairing: Palagetto Brunello di Montalcino In house made ravioli filled with a mint and walnut “pesto” and topped with a Sangiovese lamb bolognese Sixth Course - Cannoli Wine Pairing: Dezzani Moscato Ricotta cream with dark chocolate and Amarena cherries, piped into chocolate dipped mini cannoli shells, dizzeled with cherry sauce and shaved chocolate
